
Expanding the Farmstead: Bakery, Brewery, Winery, Pastaria, Pizzaria
Call us the Gluten Gluttons or the Carb Kings since most our specialties include grains and yeast. What started as homebrewing in 2004 has led to a fascination with the interactions of grains and yeast that led of sourdough bread making. Since then we've been cranking out various pastas using unique grains and historic combinations we don't see anymore. Our sweet side include sweets and treats from Norway along with our Mediterranean savory dishes. In time we hope to bring Agriculture and Fermentations together on 1 Property.

STEP 1
Orchard and Farm
Home base is the Farm. Our fruit, flower, and vegetables are the heart of everything and nothing is possible without the Earthen treasures found on the farm. Buy Local and grow wisely. Hopefully the farm will prosper and give a home to step 2.
STEP 2
Bakery, Pastaria, Pizzaria
Morning bagels to wheat pie dessert, we utilize wheat in almost all things served. Our simple menu will consist of sourdough sandwiches and sourdough pizza for lunch. In the evening we will add Pasta dishes. Something sweet should always be available to complete a meal.

Brewery and Winery
Homebrewing over 20 years has given me the experience and knowledge needed to serve more styles than you'll find on most menus. Our unique Farmstead fruits, flowers and herbs help give a unique twist. Expect a rotating tap list since there are too many great styles that need love and attention.
For years we have been growing grapes in WNC. Most have done poorly but a few have survived and ripened fruit without spraying or intervention. Those varieties are being propagated for hopes of fermenting wine in the distant future. Maybe the winery is Step 4?
